Super Loaded Sweet Potato

The last two nights I have made super loaded sweet potatoes and they were so satisfying! I kept adding more and more toppings but they all blended together beautifully.


Baked Sweet Potato

Ingredients

- Sweet potato

- Olive Oil

- Preferred toppings [1] [2]


Instructions

1. Preheat oven to 425 degrees Fahrenheit.

2. Wash sweet potato and let dry. (I recommend using Veggie Wash and a brush).

3. Poke holes into potato, rub potato with olive oil, and then wrap in aluminum foil.

4. Cook for 60 minutes or until tender.

5. Cut potato lengthwise and let cool slightly.

6. Add preferred toppings.


[1] In this version I added shredded white cheddar, steamed broccoli, sauteed shredded brussels sprouts and green onion, a fried egg, tomatoes, bacon, avocado, EBTB seasoning, and a balsamic glaze.



[2] In this version I added ghee, Parmesan, cilantro spiced black beans (Bring can of black beans, 1/2 teaspoon minced garlic, and 1-2 chopped green onion to a boil. Then add salt, a pinch of cayenne pepper, and 2 tablespoons of chopped cilantro and simmer for 5 minutes.), tomatoes, fried egg (not pictured), Greek yogurt, green onion, salt and pepper to taste.
